On the mission to become zero-wasted I started looking at all the packaging that I use in my daily life.
One of the first things that I looked at was my cherished morning granola sitting there in its shiny plastic package.
I started thinking about how I could make my own granola without the plastic and without the unnecessary ingredients.
I was able to make an amazing substitute for my store bought, plastic-laden granola just with bulk ingredients that I already had in the pantry. This recipe is really forgiving and perfect for a first-time granola maker. Use it to top plant-based yogurt, smoothie bowls, or just eat it with your favorite plant-based milk!
Preheat oven to 325°.
Combine the oats, almonds, flax seed, sea salt, and diced Planet Protein Cherry Almond Fudge bars in a large mixing bowl.
In a small saucepan, mix the almond butter and maple syrup until creamy and warm.
Pour the almond butter and maple syrup into the oat mixture and add the vanilla extract.
Stir until well combined so there are no dry oats.
Spread the mixture onto a parchment paper lined baking sheet and bake for 30 minutes, stirring half way through.
Once the granola is out of the oven, let it cool completely, then break it apart and store in a reusable container!
